Chicken Pot Pie

So we kinda skipped the letter "B..." I will make something with a B tomorrow so it doesn't feel left out! :) James decided yesterday that he wanted a homemade chicken pot pie. I had just planned to do wraps for dinner, nice and easy, but James was feeling intrepid and I wasn't about to stop him! I did still eat a wrap though while waiting. :)
I walked into the kitchen to be greeted by this surprise. :)
James peeled some garden fresh potatoes from his mom's garden.
 purple potatoes!!
 Chop, chop, chop!!
And onions, and the celery that I washed. (I had to contribute a little anyway.)  ;)

Me, helpfully stirring the potatoes on the stove.
And pouring in the cans of corn and green beans with the other vegetables being sauteed.
James adding the half cooked chicken.
And rolling the butter-laden dough. No refrigerator pie crust in this house! :)
The pie with it's filling before being cleaned up.

Adding the top layer and making it pretty.

Yum.....
It was quite delicious. Just needed a wee bit of salt.
The left over pie crust was sprinkled with cinnamon and sugar and then baked. One of my favorite treats!!
James did such a great job!! It turned out that the recipe was quite a bit off; there was enough dough for one full pie, but enough filling for 3 pies!!
So James made more pie today to share with his parents who came for dinner. The salt was perfect this time in the pie I ate. Sadly though, the sugary leftover treat was far too salty. :( Not sure why. Just one of those flukes that really suck. I guess we'll just have to make more pie crust.... ;)
I promise a "B" item tomorrow! Perhaps a dessert....
