If you're like most of us, right now you are inundated with squash! Some from your own garden and plenty more from neighbors and family that were maybe a bit over-zealous with their planting this year! Be grateful for the bounty! There are bazillions of ways to use it!
Tonight I am doing a Zucchini and Rice Casserole.
Spray your dish w/non-stick spray and then spread brown rice evenly.
Slice zucchini slices 1/2" thick.
Lay slices over rice.
Layer with chopped tomatoes and onions, garlic, basil, oregano, salt and pepper.
Pour tomato sauce and water over everything.
Cover dish tightly with foil. Bake @ 325 for 60 min. Remove foil, top w/ cheese. Bake another 10 minutes.
And the finished product is delicious! I really enjoyed the textures and the way all the flavors worked together. Next time I will add ground beef.
