Yes! In a taco! I got the basis of this idea from my sister in law. I added a few things to it on my own and was very pleased with the results.
I cooked up some extra super lean ground beef, seasoned with salt, pepper and taco seasoning.
1 green onion and some of my left over zucchini. Chopped both added them to the meat.
To that I added some lovely pinto beans and more taco seasoning.
Stir all the goodies together and then cover. I cooked it for maybe 10 minutes, till the zucchini was just perfectly tender.
Yum!
On a lovely flour tortilla went the meat mixture. On top of that, I added fresh tomatoes and lettuce, then drizzled some of my favorite dressing: Hidden Valley lite Ranch. Yum!
I really enjoyed this one! I won't be able to do a zucchini special tonight as I have somewhere to be, but stay tuned tomorrow for another squash adventure!
