Marching in Thyme with Asparagus

Tonight's dinner prep began last night. I loved waking up to the fragrant wonder of my slow cooked beef roast. It filled the whole house and welcomed me into the kitchen.

I picked up some asparagus today to continue our "A" week. I'd never cooked it before. I found a fun, easy recipe on the web and added a bag of frozen mixed veggies to it.

I used Yukon Gold Potatoes to make steak fries.
I filled a bag w/Thyme, salt and oil and coated the fries in it.
They cooked for 30 minutes. Look how lovely!
For gravy, I began with a flour and butter rue. I used wheat flour. Lots of stirring...
Then I added the liquid from the slow cooker and what was left of my Apple Raspberry juice from the fridge, maybe 1/4 c. More stirring.... and then some more stirring.....

Finally all the components came together. The gravy was a bit saltier than I like. I will have to work on that next time. The vegetables were lovely and the meat was fantastic. I wish I would've had time to make rolls. It would have been a nice addition. Another time. :) I have more asparagus so I will try it another way sometime this week.
James enjoyed it. :) I love cooking for him! He is such a good sport, my own personal test bunny. :)
The kids love these steak fries! A good go-to food that I know they'll eat. :) Onward to more experimentation and adventure!
